Chicken Salad

Just a simple salad for dinner tonight Roast chicken with Thai dressing. We've some leftover roast from lunch so I managed to whip up something simple and quick. Onions, lime juice, fish sauce, chillis, brown sugar and a collection of herbs. Also grated carrots, cabbages, and shredded wombok.

So the time has finally arrived! And as per requested, here are some snippets from the big day. There are heaps more pictures from mama's camera but I've forgotten to transfer them before they left silly me. Will definitely update more pictures. There's this one photo mama took of me that has almost exactly the same pose and expression on my face as the one someone took of me on my graduation for my bachelor's degree few years back freaky, eh?

Anyway, these were all taken by my beloved and I must say, I couldn't stay put too excited! Oh well, I think it showed from the pictures

Homemade Pizza!

As per requested for lunch.



I found a recipe making the dough recently in one of my recipe mags I've only done pizzas using pita breads or turkish breads, no having enough confidence to baking my own pizza base.
This pizza is all homemade from dough to sauce. The sauce I got from a British chef Ainsworth on one of his tv show 2 years ago and has only been making this sauce when I make pizza ever since. It does not use the bottled sauces you find in the supermarket, it's made from fresh tomatoes, fresh herbs, garlic and olive oil. And the taste is absolutely out of the world!

I don't fancy thin-crust or thick crust pizzas. I like my pizza to be just nice, and compliments the toppings. So when biting on it, everything gets well incorporated rich with toppings. demanding kan? That's why I prefer to making my own pizza. Usually I make my toppings using tomatoes, basil, mushrooms and cheese. This is tasty enough to my liking as the pizza sauce is lovely. But today, with 2 men in the house, they requested meat. So, I marinate some mince, cook them for a bit, top my pizza, add mushrooms, onion rings, basil, fresh tomatoes and mozarella cheese.

Oh and one tip: only use mozarella cheese on pizzas. You may add in other cheeses but always ensure mozarella as the main cheese. It's the best!

Now back to books!

English Muffins

Yesterday I tried on making apam balik. He had been bugging me on it for the past few days so I gave it a shot. Everything was allright except I guess my stove was not hot enough to make them crisp. But they all turned soft and still nice to eat warm, with the sound of rain outside. All four of us huddled in front of the tv

Early this morning (approx. 2 or 3 am) while everyone's occupied with their work, I snucked out and into the kitchen to make these..



Took the recipe from Zack, made half the recipe and got 6 of them. Just nice
So after some sleep, we had these with sausages I shaped flat and eggs to fit in the between the muffins which I cut into half and toast them in the toaster and layer a piece of cheese. YUM!

Karipap Pusing (Spiral Curry Puffs)

 
I remember helping my aunt 'kelim' the sides of curry puffs till my thumb hurts so bad for 2 days
She made hundreds of them and she'd call me to help her on school holidays. I was probably 9 when she taught me to do this.

I suppose that's the last time I ever touched an uncooked curry puff waiting to be 'kelim-ed'

Today my beloved fiance mentioned about making them. Not that he knows how to but the way he talks about them, intrigued me to making them again (good strategy, huh)

And here they are.



I've never tried making curry puffs from scratch. I only know how to 'kelim' them. So my first attempt turned out horrendous The oil was too hot, later I learned As if the basic is not a disaster enough for me, I tried my hands on making the spiral types. And it turned just right!

Many, many thanks to people whom put step by step pictures online I've searched too many websites to include them all in here (and to remember, actually) Sorryy..

Leave filling to dry on medium heat but keep an eye on it. Add bit of sugar, salt and pepper to taste.

*I personally love Worcesterchire sauce, so I may add some to the marinade but it won't taste traditional la kan

Mashed Potatoes with Parsley

One of the simpliest dish I've learned to make since living by myself.


Mashed potatoes.

Simple ingredients:
Potatoes, cubed and boiled soft with salt
Milk
Butter
Salt and Pepper

I added parsley to give it a different look and taste. Leftovers? Can be used to make Shepherd's Pie or potato bread. OR even better, cover leftovers bowl with cling wrap and microwave it the next day!

Soft-centered chocolate pudding

 
Soft-centered chocolate pudding. Back from where I come from, this would have considered a cake by the looks of it. But here, the texture and method of making and presenting them would easily be categorized as pudding. Well, pudding or cake, it tastes absolute delish!



There couldn't have been an easier way to make chocolate pudding. Simple ingredients, easy put together and rich! Next time, I'd reduce the baking time so the center gets all gooey instead
